Bún riêu/នំបញ្ចុកខួរក្ដាម (Tomato & Crab base Soup)

Bún riêu/នំបញ្ចុកខួរក្ដាម🦀🦀🦀is a crabs and Tomatoes base broth infused with Lemongrass,  Galangal, Kaffir lime, and Five Spices mixture.  Seasoned with fermented shrimp paste and fish sauce.

There are several varieties of bún riêu. Bún riêu cua, bún riêu cá and bún riêu ốc are much loved and commonly done traditionally among the  countryside where fresh ingredients are abundantly fetched from the wild.  Bún riêu is commonly served with assortment of seasonal herbs and vegetables.

Tangy Tomato & Crab base broth
  • 4 quarts water
  • Crabs extract or substitute with pork/chicken bones/tendons to makebroth
  • Lemongrass 6 stalks 
  • Onions 
Sauté Tomatoe & Others: 
  • 4 Tbsp of Annatto seeds Infused oil 
  • 2 Tbsp minced Shallots
  • 2 Tbsp minced Garlic 
  • 6 Tomatoes 🍅 
  • 2 Tbsp Shrimp paste 
  • 2 Tbsp Fish Sauce 
  • 2 Tbsp Sugar 
  • 2 Tbsp Chicken/Mushroom soup base 
  • Tofu 
  • Crab cake Meatballs 
  • Blood cake 
  • Salt & MSG to taste 
Toppings & Sauce
Toppings & Herbs Assortment: 
  • Garlic Chives or Scallions, or sliced onions 
  • Cilantro or Culantro 
  • Rau ram
  • Rau dang 
  • Rau muống 
  • Banana blossom (Red Cabbage substitute)
  • Crab Meatballs, and meat assortment. 🍖

  • Shrimp paste, Chili, & Lime sauce 
  • Lemongrass Chili Sauté (Optional)
