Breakfast burritos

 Chorizo-Eggs & potatoes Burritos  INGREDIENTS: 1 lb Chorizo  6 eggs  2 potatoes  Flour tortilla  INSTRUCTIONS : Saute Chorizo till cooked  Potatoes in, stir to mex it well and let simmer. Stirring occasionally to prevent the content from sticking to the bottom and burnt.  Once potatoes are done,  stir-in the eggs. Once cooked,  take it off the stove, let rest to cool. Wrap the cooked content in tortilla, and toast them in a gridle.

Albondigas stew

Albondigas stew, not your common albondigas.  I have pinky eaters that don't eat "soups" so I have to get creative.  I just added veggies and diluted my portion with more of my homemade chicken broth. What's not used made into a chutney to complete the course of my meal. Growing up  accustomed to a well-balance meals. Grain, friber, and protein. Albondigas soup is made with beef and rice meatballs which are cooked in Chili-Tomato sauce seasoned with Mexican spices and let simmered along with various produce such as potatoes, carrots, Chayote,  and zucchini. A hearty soup that my family enjoys! I make soup daily, my kids and I enjoy chicken tortellini soup, cabbage roll soup, lasagna soup,  variation of  Caldo soup, and other brothy types of soups.  Meat πŸ– πŸ₯“ πŸ₯© 1 egg πŸ₯š Arroz ½ Tsp.
