Albondigas stew
Albondigas stew, not your common albondigas. I have pinky eaters that don't eat "soups" so I have to get creative. I just added veggies and diluted my portion with more of my homemade chicken broth. What's not used made into a chutney to complete the course of my meal. Growing up accustomed to a well-balance meals. Grain, friber, and protein. Albondigas soup is made with beef and rice meatballs which are cooked in Chili-Tomato sauce seasoned with Mexican spices and let simmered along with various produce such as potatoes, carrots, Chayote, and zucchini. A hearty soup that my family enjoys! I make soup daily, my kids and I enjoy chicken tortellini soup, cabbage roll soup, lasagna soup, variation of Caldo soup, and other brothy types of soups.
